No-Bake Cookies, so easy that you can whip up an easy treat for a New Year’s celebration and no baking is involved. This is such an easy recipe! Prep time is 5 minutes and cook time is 5 minutes. It is perfect for when you don’t want to spend your vacay or family time stuck in the kitchen.
Ingredients:
- 3 cups oatmeal
- 1 cup peanut butter
- 2 cups of sugar
- 1 stick of butter
- ¼ cup of cocoa powder
- 1 tablespoon pure vanilla
- 1 pinch of salt
- Line your baking sheet or just your counter with wax paper, parchment or aluminum foil.
- In a saucepan bring the butter, sugar, milk, cocoa butter to boil overheat, stirring regularly. Remove from heat and add the oats, peanut butter, salt, and vanilla. Mix and incorporate well together.
- Then drop spoonfuls of the mixture on the prepared surface. Store in an airtight container or in sandwich bags.
Enjoy with a cup of coffee for breakfast, and easy dessert at the end of the day or pack up to take out to enjoy some fun!
Additional tips: use an ice cream scoop to the mixture; it makes for the perfect size cookies. You can add protein powder in step 2 and add some additional nutrients to the yummy goodness. You can easily substitute items to make this recipe healthier, vegan and gluten-free. Milk can be substituted for unsweetened almond milk. Butter can be substituted for melted coconut oil. Sugar can be substituted with honey or maple syrup or stevia.
